Step 1: Prep the Sweet Potatoes
- Plug the sink drain and fill it with water. Place one orange sweet potato and one purple sweet potato into the sink for washing.
- Once clean, transfer them to a clean basket and drain the sink.
- Peel both sweet potatoes thoroughly with a peeler and discard the peels into the trash.
- Slice both sweet potatoes into chunks and place them into separate steamers on the stove. Turn on the heat and steam until cooked.
Step 2: Make the Pudding Base
- Add water to one plate of purple sweet potato and two plates of orange sweet potato chunks.
- In the rightmost orange sweet potato plate, add matcha (green tea) powder and glutinous rice flour. The other two plates just get glutinous rice flour.
- Stir each plate thoroughly with a wooden spatula until you have three smooth, colorful mashed sweet potato mixtures.
- Cut each dough into small pieces and transfer them into a steaming pot’s three separate compartments. Cover with the lid and steam them well.
- After steaming, scoop them out using a skimmer spoon into a dish, sprinkle sugar over each, and remember to line up the green mash on the right, yellow on the left, and purple in the middle.
Step 3: Prepare the Toppings
- Use a square-headed hammer to crack open a coconut on the cutting board, peel away the shell with a peeler, and set aside only the coconut meat.
- Discard the shells and chop the coconut meat into small pieces, placing them into a blue bowl.
- Crack open the peanuts using the same hammer, discard the shells, and roast the peanut kernels in a pan while stirring with chopsticks until golden brown.
- Transfer roasted peanuts into a pink bowl, crush them with a wooden pestle, and place the crushed peanuts into a small bowl.
Step 4: Make the Pudding Liquid
- Heat a pan, add butter, and pour in a mix of flour and water, followed by more butter and gelatin water.
- Stir constantly with a wooden spoon until fully combined and cooked through.
- Pour the pudding mixture into a large bowl and set aside.
Step 5: Make Coconut Glutinous Rice Balls
- In a small bowl, mix water with glutinous rice flour using a wooden spoon until it forms a smooth dough ball.
- Place the dough on the cutting board, cut it into small pieces, and move them into a blue plate.
- Add the chopped coconut meat from earlier into the plate and mix together.
- Keep tapping the mixture by hand until it forms coconut rice balls.
- Boil water, add the balls into the boiling water, stir with chopsticks, and once cooked, scoop them out into a middle plate and sprinkle with sugar.
Step 6: Final Assembly
- Place the three different colored sweet potato strips into a large central serving bowl in order: green on the right, purple in the middle, and yellow on the left.
- Add some decorative green leaves, followed by the coconut glutinous rice balls.
- Top with crushed peanuts, shredded coconut, blue powdered seasoning, and finally the pudding mixture.
