Step 1: Prepare the Fish ππͺ
- In front of you is a basin with mountain spring water flowing from a bamboo tube, making a splashing sound π.
- Place the fish on the cutting board and use a knife to remove the fins, collecting them in a small dish.
- Cut between the head and body, then slice horizontally to separate one half of the fish.
- Flip the fish over and repeat to remove the other half.
- Place one half on the cutting board and slide the knife along one side to separate the skin from the flesh.
- Use tweezers to remove any remaining bones and place them with the fins.
- Pat the fish dry with a cloth.
- Cut the fish into large chunks and place them on a large plate.
- Repeat with the other half of the fish, placing the chunks on another plate.
- Sprinkle one plate with a spoonful of salt and a spoonful of black pepper. Leave the other plate unseasoned.
Step 2: Prepare the Vegetables π₯¬π
- From the lower-left basket, take the vegetables covered in soil and place them in the basin to wash.
- You have scallions, tomatoes, onions, cucumbers, mangoes, and avocados.
- Chop the washed vegetables on the cutting board and place each in its corresponding patterned plate.
Step 3: Season the Marinated Fish ππ₯
- Place the salted and peppered fish chunks into a perforated metal bowl and submerge in water to rinse off seasoning.
- Use your fingers to gently move the fish around in the water for a thorough rinse.
- Lift the metal bowl, drain, then transfer the fish to a wooden bowl.
- Add tomato pieces, onion chunks, chopped scallions, and squeeze lemon juice on top.
- Stir with a wooden spoon until evenly mixed.
Step 4: Season the Unmarinated Fish πΆοΈπ₯’
- Squeeze chili sauce into an empty bowl in the top left, then add mayonnaise.
- Mix the sauces together with a spoon.
- Use tongs to divide the unseasoned fish chunks from the center plate into two empty bowls (bottom left and bottom right).
- Sprinkle chopped scallions and onions evenly into both bowls.
- In the left bowl, add the prepared sauce, then pour in soy sauce and olive oil.
- In the right bowl, add minced garlic.
- Stir each bowl with a spoon until well mixed.
Step 5: Cook the Rice ππ₯
- Place the pot of rice in the sink and wash it, using your fingers to stir the grains in the water just like washing fish.
- Lift the pot, drain the water, then add fresh water to the rice.
- Cover with the lid and place the pot over the campfire.
- When the timer ends, remove the lid and stir with a spoon until the rice is cooked.
- Cover again and wait for the final timer to finish.
- Scoop the rice into a bowl.
Step 6: Plating & Finale πΆπ½οΈ
- Arrange avocado, mango, and cucumber slices on banana leaves.
- Add the rice.
- Place the three bowls of fish beneath the rice.
- Hand three musical instruments to the sleeping capybaras on the beach to make them start playing.
