Step 1: Prep the Ingredients
- Plug the sink and turn on the faucet to fill it with water.
- Place the five ingredients beside the sink into the water to wash them — skip the chicken for now.
- While waiting, neatly lay out seven plates from the stack in the lower left corner.
- Take the orange from the sink, slice it with a knife, and place the slices on the first plate.
- Take the lemongrass from the sink, chop it finely, and place it on the second plate.
- Take the onion from the sink, chop it, and place it on the third plate.
- Take the garlic from the sink, mince it, and place it on the fourth plate.
- Take the ginger, chop it, and place it on the fifth plate.
- Place the whole chicken on the cutting board, cut it into chunks, and move them to the sixth plate.
- Use a spoon to scoop a portion of rice into the seventh plate.
Step 2: Prep the Eggs & Crispy Garlic
- Open the pot lid, add water, and place two eggs inside. Cover the pot and turn on the heat.
- Once boiled, use a strainer to scoop out the eggs onto the cutting board. The shells will crack automatically.
- Peel off the eggshells (tap a few times if needed) and discard them in the trash bin.
- Slice the eggs in half with a knife and place them on a plate.
- Pour oil into a clean pot, heat it, and then add minced garlic.
- Fry the garlic until crispy, then scoop it out with a strainer and place it in a separate dish.
Step 3: Cook the Chicken Porridge
- Pour oil into the pot, turn on the heat, and wait for it to heat up.
- Add minced garlic, ginger, and onion. Stir with a spatula until fragrant and lightly browned.
- Add chicken chunks and rice. Pour in fish sauce, followed by water.
- Add a curry cube, then season with salt and pepper.
- Cover the pot with a lid and let it cook until everything is tender and the flavors meld.
Step 4: Serve
- Use a large ladle to scoop two servings of the porridge into a bowl.
- Sprinkle chopped lemongrass and crispy garlic on top.
- Add sliced oranges and halved boiled eggs for garnish.
- Pour some fish sauce into a small dipping dish on the side.
