Mooncake Strategy Guide
Step 1: Prepare the Filling and Lye Water
- Place a frying pan and a saucepan on the stove. Add oil to the frying pan and water to the saucepan.
- Once both start bubbling, add yellow lotus seed paste powder to the frying pan, and baking soda (looks like white flour) to the saucepan.
- Stir the saucepan clockwise with a spatula until the baking soda turns into lye water. Pour it into a bowl.
- Keep stirring the frying pan until the mixture thickens into lotus seed paste. Scoop the filling into another bowl.
Step 2: Make the Dough
- Move the dough from the bowl onto the countertop. Use your fingers to poke the center until it forms a dent, then pour in a bit of lye water.
- Use a rolling pin to flatten the dough into a smooth, round shape.
- Slice the dough into three equal portions with a knife and neatly place them onto the rectangular tray above.
Step 3: Mix the Fillings
- Place the yellow lotus seed paste on the counter. Mix in chopped green nuts and shredded white coconut from the side bowls.
- Cut the mixture into three equal portions and place them on the tray to match the dough portions.
- Prepare another lotus filling ball. Add green nuts, coconut, a roasted salted egg yolk, and softened white noodle-shaped toppings (soaked in hot water).
- Cut this mixture into three portions and arrange them on the tray alongside the dough.
Step 4: Assemble the Raw Mooncakes
- Select a filling and place it onto a dough portion. Use your fingers to gently press the filling’s center until the dough wraps around it completely.
- Repeat this process for the other fillings, shaping them into raw mooncakes and lining them up on the tray.
- Use a large carp-shaped mold, pressing it down multiple times over a mooncake to create a lovely fish shape.
Step 5: Bake the Mooncakes
- Place the four mooncakes into their respective slots in the mold oven. They’ll be shaped into a kitten, seashell, pine tree, and fish designs.
- One by one, bake each mooncake until perfectly golden.
- Place the baked mooncakes on individual small plates, with the carp-shaped mooncake on a large dish.
- Lift the teapot high and pour tea into the cup. Holding it up lets the tea flow out smoothly.
